Spicy red lentils soup

I don’t know how to introduce this recipe, there is no story behind it, only the desire of something warm and few ingredients in the cupboard. It is a spicy soup, easy, quick  and a healthier option than a sachet of dry soup in a cup.

Spicy red lentils soup


1 large shallot
1 cup of red lentils
3 grated carrots
1l vegetable stock
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 chilli powder
extra-virgin olive oil
1 spring onion

In a pan heat some olive oil, finely chop the shallots and add them to the pan. Lightly fry for a couple of minutes, then add the spices: coriander, turmeric, cumin and chilli, you can  play with the spices to taste.  Gently fry for another couple of minutes and then add the grated carrots, the lentils and stock. Bring to the boil and cook for 15 more minutes or until the lentils have the consistency you prefer. Season with salt and pepper and mix well. Pour into the bowls and serve with a sprinkling of chopped spring onion.
